What is a fermented food?
Fermented foods are those that have undergone a specific transformation thanks to the presence of microorganisms that alter their chemical composition. These changes enrich the foods and allow them to last longer.

What is spontaneous fermentation?
Spontaneous fermentation is a food transformation process that occurs, under specific conditions, thanks to the natural presence of bacteria and microorganisms without the use and/or inoculation of starter cultures.

What does it mean that a fermented food is unpasteurized?
Unpasteurized fermented foods do not undergo any heat treatment or microfiltration, and are therefore naturally rich in live microorganisms. Pasteurization and microfiltration, on the other hand, render the foods free of all microorganisms.

Are unpasteurized fermented foods safe?
Yes, they are safe because during fermentation an environment totally hostile to pathogens is created. Furthermore, spontaneous fermentation creates such biodiversity that it guarantees the presence and vitality of different strains of beneficial bacteria that act as antagonists to pathogens.

 
What does it mean that a fermented food is alive?
Fermented foods are ALIVE due to their richness and biodiversity of beneficial microorganisms, they are ALIVE only when they are not subjected to pasteurization or microfiltration.

 
What does it mean that unpasteurized fermented foods are beneficial?
Numerous scientific studies are confirming that unpasteurized fermented foods provide numerous benefits to human health. Although they cannot be defined as probiotic products, they are beneficial for the well-being and balance of the intestinal microbiota.
A balanced microbiota is essential for health and well-being. Today, it's known that many diseases, even serious ones, stem from microbiota imbalances. In numerous civilizations, traditions, and cultures, these foods have been consumed for millennia, not only for their deliciousness but also because their beneficial properties have always been recognized.


What are the health and wellness benefits of fermented foods?

How long do the products last?
The shelf life of products varies from 10 to 12 months after packaging. We do not ship products with a shelf life of less than 3 months.

Can the products contain gluten or allergens?
Our products are gluten-free and no allergens enter our laboratory.

Why should I always keep fermented drinks and vegetables in the refrigerator, even before opening?
Unpasteurized fermented foods and beverages are LIVING products, and like other similar fresh products, they should always be stored in the refrigerator, even before opening. This ensures greater control of the fermentation process and a longer lifespan for the microorganisms. Refrigeration also prevents fermentation from causing excessive changes to the flavor and texture of the food, ensuring its stability.


How is shipping done?
We use refrigerated couriers. We have chosen to guarantee the cold chain until delivery to the customer. If the shipment is held in storage, the order remains at a controlled temperature. Using this shipping method, we do not use styrofoam, ice boxes, or dry ice.

How long does it take for the order to be processed?
Orders are generally processed within 2-4 days.

How long does the courier take to deliver?
From 1 to 4 days depending on the area and time of year.

How do I track my shipment?
On the day your order is picked up by the courier, you'll receive an email with your shipment tracking information. If you'd like it to arrive, please enter your email address when placing your order.


How much are the shipping costs?
Shipping is free for orders over €69. For orders under this amount, the cost is €6.90.
