A beautiful story

“Once upon a time there was a beautiful and good land, with large cultivated fields and with many people who loved and respected it.
In these fields grew delicious vegetables, rich in goodness, beauty and bright colors, true works of art for the eyes, for the heart, for the appetite and for nourishment. These vegetables were picked every day with love and, still fresh, brought to a magical place where alchemy and precious transformations took place.

In this magical place there were some people who, enchanted by the beauty of those vegetables, contemplated them with devotion and gratitude, cleaned them with great care and cut them by hand, one by one with great delicacy.
Then the vegetables were placed in large containers, sometimes gently massaged, other times immersed in a mixture of water and salt. Then they spent some time inside those containers, the time necessary for the tiny living microorganisms, which they had already met in the fields where they had lived and with whom they were already friends, to take care of them, making them even more beautiful and good. On those large containers were written words, intentions, inspirations of gratitude for the time spent with the beautiful and beloved vegetables, and so that those inspirations and intentions could further enrich the experience that people would have by eating them.

The slow passing of time was necessary for those tiny microorganisms, together with their vegetable friends, to carry out a magical process called “fermentation”, a very ancient and sacred knowledge, linked to the meaning of life, time, the rhythm of the seasons and Nature.

Once that time had passed, the vegetables were even more beautiful and full of goodness and were put to rest in glass jars dressed in beautiful colors and enriched with special spices and aromas. And from that magical place of alchemy and transformations they traveled far and wide to give experiences of beauty, nourishment, care and well-being to as many people as possible.”

What you have in your hands is not just food, a vegetable is not just a vegetable, it is also the time and care that so many people have dedicated to it, it is the warmth of the earth that has hosted and enriched it, the heat of the sun that has illuminated it, it is the breath of wind that has caressed it, it is the purity of the rain that has quenched its thirst, it is the embrace of the space that has contemplated it, it is the hand of the man who has loved and desired it so much. It is the mystery and the power of life, which every day supports us.
This is what we should be grateful for every time we prepare to feed ourselves and others.
